Learning how to eat together

My friend's father took us to Quán Dê Đồng Cỏ for goat meat. The meal included steamed slices, a salad, hotpot, and cooked blood sausage. When raw blood was offered, I declined and stayed with the cooked dishes. But it was the leaves covering the table that most caught my attention.

There were herbs, leaves, and slices of green banana to eat with the meat. The banana's astringency initially surprised me. Together with the other ingredients, it became part of a combination I was only beginning to understand.

The dish was not entirely finished when it left the kitchen. At the table, each person combined, wrapped, dipped, and adjusted. My hosts showed me what went together and how to eat it. Flavor emerged through those actions as much as through the cooking.

This was a small lesson in bodily knowledge. I could have read a list of ingredients without understanding the meal. Watching other people, trying a combination, and responding to its taste taught me something the menu could not.

I left thinking about how much a shared meal asks us to learn—and how generously that knowledge can be passed around a table.

胡志明篇之吃山羊肉时,为什么桌上摆满叶子?

这一餐,朋友的父亲带我们去吃山羊肉。

起初我以为,无非就是换一种肉:清蒸、凉拌,再煮一锅火锅。但菜一道道端上来之后,我才发现,真正陌生的并不是山羊肉本身,而是整套围绕它展开的吃法。

我们点了清蒸山羊肉片、凉拌山羊肉、山羊肉火锅,还有蒸制的山羊血肠。朋友的父亲原本还想请我尝试生羊血,但这道菜确实超过了我的饮食接受范围,没办法勉强自己,我最后还是点了一碗煮熟的羊血。能喝水。

更让我好奇的是,桌上几乎摆满了各种叶片和植物。他们吃山羊肉时,常常会先拿起一片叶子,把肉、香草和其他配菜包在里面,再蘸酱一起入口。旁边还有切得很薄的生青香蕉,口感坚实,带着明显的涩味。它单独吃并不讨喜,但和油脂较重的山羊肉、香草及蘸料放在一起,反而能够压住膻味,也让口感变得更有层次。

这里的一盘菜不只是菜,而是像可以拼接和组装的物品,肉只是中心,叶片、青香蕉、香草和蘸料共同决定了这一口应该是什么味道。食客需要亲手挑选、组合、包裹。有人包很多香草,有人加生青香蕉,有人只蘸一点酱。所谓“味道”,并不完全由厨师在后厨决定,也是在餐桌上,由每一位食客亲手完成的。

餐桌上的人一边告诉我哪种叶子应该配什么,一边示范怎样包、蘸多少酱。食物也因此成了一种教学:一个家庭通过共同进餐,把味觉习惯和身体动作传给下一代,也传给第一次坐上这张餐桌的客人。
